Ingredients

30 minutes
4 people
  • 1/2 kgsmall round eggplants
  • 1medium onion diced and crushed
  • 1 inchginger crushed
  • 8-10 clovesgarlic crushed
  • Red chilli powder 1 tsp or to taste
  • Salt to taste
  • 1/2 tspturmeric powder
  • 2 tspcoriander powder
  • 1/2 tspchaat masala
  • 1/2 tspamchur powder or dry mango powder
  • 1/2 tspgaram masala powder
  • 1 1/2 tbspwhole achari masala
  • 1/2 cupoil
  • Coriander leaves to garnish

Steps

    The whole achari masala(cumin seeds, fennel seeds, Nigella seeds or kalaungi, mustard seeds, fenugreek seeds, asafoetida) take 1 1/2 tbsp in a whole of these spices and dry roast them.

    Thoroughly wash and pat dry the eggplants and leave it aside. Now in a bowl add all the spices along with roasted achari masala and ginger, garlic and onions. Mix them very well. Now add oil to it and again mix. Don't use any water if you want to add more oil go for it but don't add water. We will not use any extra oil after this so use it generously.

    Now slit the eggplants from the bottom to the top twice making four parts but make sure not to cut it till the end. It should be attached to it's stem. Now start stuffing the prepared marinade into the eggplant cuts. Stuff if nicely so that it could reach till the end. Like so stuff all the eggplants and place it in a pan. Don't overlap it. Heat the pan on high flame for 3-4 minutes then lower the heat and cover it.

    Place all the extra marinade on top of the eggplants and cook it on a low flame. After 15 minutes flip over all the eggplants and again cook till completely done. Be very gentle while flipping up. Once done add some chopped coriander leaves and dish it out. Enjoy with puris, parathas, roti or any bread you like.
