Flan (Baked Custard) in a Water Bath

In a mold or pot, add the 5 tablespoons of sugar. Heat over low heat until the sugar melts completely and turns an amber color. Let it cool.

In a bowl, pour the sweetened condensed milk. Using the empty can, measure out the same amount of your preferred milk (about 1 1/4 cups) and add it to the bowl.

Add the 4 eggs, 2 tablespoons of vanilla extract, and 4 tablespoons of cornstarch to the mixture.

Mix all the ingredients together until well combined.

Pour the mixture into the mold with the cooled caramel, filling it up to 3/4 full.

Cover the mold tightly with aluminum foil to prevent water from getting in.

In a larger pot, place a plate or small cup at the bottom to elevate the mold so it doesn't touch the bottom of the pot. Place the mold inside the pot. Add water until it reaches halfway up the sides of the mold. Cover the pot and heat until the water starts to boil. Once boiling, cook for 60 minutes over medium heat. After 30 minutes, check the water level; if it has decreased, add more hot water as needed.

After 60 minutes, turn off the heat. Remove the lid and use a paper towel to wipe off any water on top of the foil. Carefully remove the mold from the pot and uncover it.

Let the flan cool for 1 hour, then refrigerate for 4 hours to set. Run a knife around the edges to loosen the flan, place a plate on top, and invert to unmold.
