Wash and soak black pea eye for nearly 4-5hours or overnight.

Now pressure cook these black pea eye beans with enough water and salt. Take 3 whistles on low medium flame.

Wash and clean Malabar spinach. separate leaves and stems. Wash the leaves with clean water 2 to 3 times. Take tender vine stems and cut into one inch piece. Chop the leaves

Once the black eye peas are cooked remove them in another vessel and add the Malabar spinach leaves and stalks into the pressure cooker and 1 cup of water. Cook for 1 whistle.

In a meanwhile dry roast red chillies, cumin, mustard, coriander seeds, black pepper and keep aside. In a mixer jar add all the roasted spices, turmeric powder, tamarind, jaggery, salt, coconut and ½ cup of water. Grind it to smooth paste.

Once the pressure is released, add again the black eye peas to the Malabar spinach in a cooker and also the grinded paste. Add water to get desired consistency and then cook for another 10 -12 minutes.

Once it is done, serve with plain steam rice or chapati.
