Ingredients

  1. 5guajillo chiles
  2. 5pasilla chiles
  3. 6tomatoes
  4. 1large onion
  5. 3 clovesgarlic
  6. 4 cupsbroth or water
  7. salt or chicken bouillon to taste
  8. oil as needed (for sautéing)
  9. fried tortilla strips as needed
  10. 1 handfulcilantro
  11. 1avocado, diced
  12. as neededfresh cheese, cubed,
  13. pork rinds, to taste
  14. sour cream, to taste
  15. lime, to taste

Cooking Instructions

    Chop the tomatoes and onion and sauté them with the garlic and chiles in a bit of hot oil.

    Once ready, transfer to a blender. Add a handful of fried tortillas to thicken the broth, along with some cilantro, the broth, and salt.

    Return the blended mixture to the pot and bring to a boil. Adjust the salt if necessary. If it's too thick, add more broth or water.

    I prepared the tortilla strips in an air fryer. 15 minutes at 340°F.

    Place the tortilla strips in a bowl, cover with the broth, and garnish with avocado, cheese, pork rinds, sour cream, and finish with a squeeze of lime.
