Make small cuts in 2-3 places on the fat strip surrounding the pork chops. Dredge them in flour and brown on both sides in a pan with melted butter. Season with salt and pepper, add the sage, and cook for 10 minutes, turning them only once.

Remove them from the pan, discard the cooking residue, and return them to the pan with the white wine. Let it evaporate, finish cooking, and serve.
