Simple meatless chow mein. You can use vegetarian oyster sauce to make it 100% vegetarian.

Steps

Mix dark soya sauce, oyster sauce, chilli oil, sesame oil according to above proportions.

Mix evenly and leave aside.

Slice capsicum, red onion and garlic. Leave aside.

Cut broccoli into small size. Boil a pot of water. Blanch for 5 seconds. Drain and leave aside.

Grab a handful of noodle. Boil a pot of water. Cook for 4 minutes. Drain, rinse with water to cool it down. Leave aside.

Heat up cooking oil with high heat, stir fry both red onion and garlic for 1 minute.

Add capsicum and stir fry for 1 minute.

Add broccoli and stir fry for 1 minute.

Add the cooked noodle, follow by the mixed sauce. Stir fry evenly.

Add some water if it is too dry. Continue to stir fry until the color is consistent and the water evaporate completely.

Ready to serve.
