Whenever i cook parwal, i m always remembered of my sundarban visit in kolkatta. We had stayed in a cottage where the simple but very tasty dishes were prepared by local village women. The gravy is not the same as cooked by them, but taste is no less.

Peel,wash and cut parwal lengthwise

Peel, wash and chop potato
- 3
Heat up pan add oil and saute potato for 5 mins
- 4
Add parwal also and saute both for another 5 mins on med flame

Make a paste of tomato, gr chilli,ginger andgarlic

Take veggies out of pan and add asafoetida and cumin to oil

Put tomato puree and cook

Add all masalas then add poppy and melon paste

Wcen cooked add veggies,salt and mix

Adjust consistency with water or milk

Finally malai can also be added for a rich creamy gravy
