Fried chicken seasoned with salt and lemon for a refreshing taste.

Remove the chicken thighs from the bone and cut them into two-bite-sized pieces.

Mix the seasonings with the meat.
Marinate for 10-30 minutes, then sprinkle with cornflour. - 3
Heat the oil to a temperature where the batter, once dropped into the oil, sinks and then floats immediately and fry the meat for 1 minute. When the batter is white and firm, remove the meat and leave to rest for 3 minutes.
Heat the oil to such a temperature that the meat floats when the batter is added, but does not sink, and deep-fry the meat after it has rested for 20 seconds until golden brown.This is called twice-frying.

Drain the oil and serve hot with cut lemon wedges!
