Ingredients

Serves 5 - 6 servings
  • 4 1/4 cupswater (1 liter)
  • 1/2pineapple
  • 1/4 cupquinoa (about 45 grams)
  • 1 cupsugar (about 200 grams)
  • 1/2 cupcornstarch (about 65 grams)
  • clovesWhole
  • stickCinnamon

    In a pot, caramelize the sugar over medium heat without adding water.

    Let the sugar melt completely until it turns into caramel.

    Carefully add the water (use enough to reach your desired consistency), then add the cinnamon stick and whole cloves. Add the pineapple, cut into small cubes.

    Once the pineapple is added, stir in the quinoa (make sure it’s been rinsed well beforehand).

    Bring the mixture to a boil and cook the quinoa until it bursts open.

    Once the quinoa is cooked, add the cornstarch dissolved in a little water. Stir until the mixture thickens.

    Note: When the dessert is finished, do not add more sugar since you caramelized it at the beginning for sweetness and color. Taste and add a little more sugar if needed, but don’t make it too sweet. Remember to remove the cloves and cinnamon stick before serving.
