Combine the ripe roughly chopped plums with sugar and the cinnamon stick. Mix well and set the pan on medium heat. Let the sugar melt completely.

Once the sugar has melted, increase the heat and let the mixture come to a boil. Mash the plums a little while mixing during the cooking process.

Continue boiling the mixture for about 5 to 10 minutes or until the bottom of the pan is slightly visible while moving the jam with a spoon or spatula. The jam will be slightly thicker and darker in color.

Switch off the gas, pour this mixture in an sterilised airtight jar or glass bottle. The mixture will get thicker after a few hours. Apply the jam onto a slice of bread and enjoy !!
