Instant Pot Maple Syrup Flan

I found myself at 11pm at night craving flan, but wanted to try and avoid a sugar rush that late at night. Thus, I combed the internet for a simple maple syrup based flan recipe that works in the Instant Pot. Since I could not find one that included everything I wanted, I took inspiration from a few different recipes and made my own Frankenstein's monster - literally.
The first attempt went horribly wrong and it was then I realized that high pressure + large air bubbles = kaboom. Think of the eggs from "Alien"...
The second attempt was a resounding success, and I thought I would share this with anyone else looking for a really easy way to make yummy, healthier flan at home!

The second attempt was a resounding success, and I thought I would share this with anyone else looking for a really easy way to make yummy, healthier flan at home!

Place all ingredients into a large mixing bowl. Break up the egg yolks with a fork or hand whisk to make the next step easier.

Use an electric mixer to whisk all ingredients together for 3-5 minutes. You should not see any egg separation - a solid, pale yellow liquid.

If you are low on space in the fridge, carefully transfer your mixture into a mason jar or similar.

Use your whisk to break up the bubbles that have formed on the surface.

Secure some clingwrap over your bowl and lightly tap the bottom of the bowl against the counter top a few times to break up larger air bubbles.

Place in the fridge for at least 1 hour. This will give the mixture time to release all those troublesome bubbles.

Take your Instant Pot and pour in:
1.5 cups of water (3 qt)
2 cups of water (6-8 qt) - 8
Place the trivet at the bottom of the pot with the handles facing up and out.

Chose any Instant Pot safe container to carefully spoon your mixture into. I tried out traditional ceramic ramekins as well as Oui yogurt bottles. Fill them up not quite to the top and place each one carefully onto your trivet.

Take a square of aluminum foil and place it lightly over the top of your containers. This is to prevent excess water dripping from the lid onto your flan during cooking.

Seal the lid and power on the Instant Pot.
Set the Pressure Level to Low Pressure
Turn OFF Keep Warm
And set the cook time to 12 minutes. - 12
Once the cooking finishes, turn off the Instant Pot and let it naturally release for 10 minutes.

Open the lid and let some of the steam dissipate before handling the hot foil and containers.

Secure a square of aluminium foil to the top of each container and press it down so it's air-tight around the rim. Place in the fridge for at least 2 hours.
Then you can enjoy some cool, creamy, slightly-more-healthy flan!
