On special auspicious occasions of Raksha Bandhan I made Rice Kheer flavoured with caramelized walnuts.
Steps

Wash and soak basmati rice for 30 minutes. Drain and grind coarsely in a mixer jar. Keep aside.

In a thick bottom cooking pan add and keep milk boiling. Add grinded basmati rice in hot milk. Cook on low flame for 20 minutes by stirring constantly so the rice doesn't stick at the bottom. As rice gets cooked and the mixture thickened add sugar and cook till it melts. Off the flame and cover with a lid.

In a small pan add walnut pieces and roast for a few minutes. Keep aside. Now add crushed mishri/rock candy in the same pan. Melt it on medium-high flame.

As mishri rock candy gets caramelized add roasted walnut pieces. Mix well. Transfer it in a grease plate. Cool. Break caramelized walnuts into small pieces with a hand. Crushed it in motar and pestle to a coarse powder.

Add this caramelized walnut powder to prepared warm rice kheer. Add cardamom powder. Mix well. Pour into it individual serving bowl. Garnish with pistachio flakes. Chill in refrigerator till the time of serving.

Serve Delicious Cool Caramelized Walnuts Kheer as desserts or as sweet dish in Lunch Meal on special auspicious occasion of Raksha Bandhan.
