Clay pot Rice

Easy claypot / One pot rice. This is the easier version of claypot rice. Chicken is marinated and cooked until just done. Cook rice with a bit of water until liquid is almost gone. Add cooked chicken to the rice right away. Fluff the rice with fork or chopstick. Cover and leave the rice to absorb the flavour from the chicken.
Note: You can add additional ingredients like thinly sliced sausages or crushed salted fish to your rice. Serve with blanched chinese greens.

Steps

A - Combine & mix chicken pieces with the rest of the ingredients in A. Marinate. In the meantime, soak dried shiitake mushrooms in water. Once softened, remove the stems and slice mushrooms.

B - Prep the rest of the ingredients in B. See pic below. Next, heat up 3 - 4 tbsp of cooking oil in a large pan or wok. Sauté B until fragrant.

Stir in marinated chicken pieces and the rest of its liquid and cook over medium high heat until chicken is almost cooked. Remove from the heat immediately.

C - Wash rice. Place in a clay pot or rice cooker. Add 1 tbsp of cooking oil and stir to mix. If using claypot, adding oil help the bottom of the rice to crisp nicely. Next, add 1.5 cup - 2 cups of water. Cook until rice is almost cooked or until water is mostly gone. Top rice with previously cooked chicken (B). Cover and leave to completely cook for 5 - 8mins. Remove the lid and fluff the rice using chopstick or a fork. Cover again. Continue to cook over the lowest heat.

Leave the rice to fully absorb the chicken flavour. Next, remove the lid, sprinkle with some chopped spring onion or scallions. Turn the heat off. Serve immediately.
