Cauliflower Parmesan

Take it easy, take it easy. This is a really good recipe. It has great texture, great flavor and is very simple to make. I’ve seen recipes that call for flour egg and breadcrumbs on the slabs of cauliflower and then frying them. However I have done it that way and by just slicing the slabs, putting them on a bit of pizza sauce, more pizza sauce on top and sliced fresh lightly salted mozzarella. Having done it each of these ways, I don’t see the benefit of the added effort, time and mess of frying the cauliflowerA little bit of shaved Romano after you take it out of a 400° oven for 40 minutes, let it cool for 15 minutes and it’s really good. Excellent leftovers, even at room temperature.

Ingredients

40 minutes
4 people
  1. 1 headcauliflower sliced into inch thick slabs. Don’t worry if some pieces break. And use a paring knife to cut out the green leaves and some of the tough stem
  2. 1 jarpizza sauce, because it’s thick. Otherwise you can use prepared tomato sauce
  3. 1ball fresh lightly salted mozzarella sliced into a half inch rounds
  4. Freshly grated Romano cheese to taste

Cooking Instructions

40 minutes

    Slice the cauliflower into 1 inch slabs. After the score in the green leaves and tough stem, save everything else and use them to fill in the gaps in a ceramic baking dish.

    Pour some pizza sauce over the bottom of the dish and then arrange the cauliflower as best as you can in a single layer.

    Pour more pizza sauce over the top but don’t overdo it.

    Put the slices of mozzarella on top of the pizza sauce.

    Spoon just a little more pizza sauce on top of the mozzarella

    Bake in a 400° preheated oven for 40 minutes checking after 35 to make sure the mozzarella isn’t overcooked.

    Take out of the oven, look cool for at least 15 minutes and serve. Use a slotted spoon because the cauliflower may give off some liquid.
