Simple delicious side dish,dry subzi prepared from cabbage, carrot and potato with regular spices to serve as side dish for Gujarati Lunch Thali.
Steps

Chopped all mentioned veggies. In cooking pan add heat oil, temper with mustard seeds cumin seeds as splutter add asafoetida turmeric powder, curry leaves and green chilli ginger paste. Saute for 30 seconds.

Add chopped carrot julienne saute for 2 minutes. Add shredded cabbage, tomato and potato pieces. Add and mix salt and red chilli powder, coriander seeds cumin seeds powder, lemon juice. Mix well. Stir-fry for 3-4 minutes. Garnish with chopped coriander leaves.

Serve /Relish Delicious Hot Cabbage Carrot Potato Stir-fry as side dish (dry subzi) in lunch meal.
