Instant Arabic style Pickled chillies and cucumber| Lebanese Shawarma pickles

In the Mediterranean cuisine we enjoy these pickles with almost every food.. It is called “Torshi” which comes from Persian language meaning “sourness”.
Shawarmas, kabab, grilled chicken, falafel.. The food is just incomplete without them.. So when I make shawarmas at home, I really need these pickles or else I don’t want to make them at all!!
This weekend while preparing for the shawarmas, I came up with this instant recipe which was too easy and quick.. Otherwise just leave the veggies in the liquids for about 4-5 days in the refrigerator for the slow process.
You can use any veggies you like, as in different parts of Arab, different veggies are preferred. Beet roots, orange carrots, cabbage, turnips, any green chillies and cucumbers and baby shallots.
