During the recent patriotic holidays, I made pambazos and had a little longaniza left over—it was delicious! So today I made some eggs for breakfast, and they turned out amazing. I hope you enjoy them as much as I did. Viva México!

Remove the casing from the longaniza and cook it in a skillet over medium heat without adding oil.

Once the longaniza is nicely browned, use paper towels to remove any excess grease.

Beat the eggs (no need to season, as the longaniza is already flavorful and salty). Return the longaniza to the skillet and add the eggs. Cook until the eggs are fully set.

Serve with warm refried beans and corn tortillas.
