California Farm Spinach & Shrimp in Cheese Sauce

Cheese, spinach, cream and garlic, wonderful combination to cook shrimp with. This time of summer is too hot for fresh spinach, we use swiss chard or you can use frozen spinach , so this recipe is for a pound of frozen spinach and a pound of shrimp. Any cheese works to make the cream sauce. Makes a great dinner served over noodles. If you like to try making your own noodles, see my recipe in cookpad.

Ingredients

Half an hour
4 people
  1. Poundshrimp
  2. Poundspinach
  3. Cupleftover cheese, chopped, or grated
  4. Cupcream
  5. Cupwhite wine
  6. Elephant garlic cloves, peeled
  7. 1Onion, chopped
  8. 8sundried tomato quarters in 2 Tbs olive oil
  9. Black Pepper and sea salt flakes to taste served on the table (cheese contains salt)
  10. Equipment: large deep cast iron skillet
  11. Cost: frozen, peeled Newport Shrimp, $5, spinach $1, cream $1, cheese $2, sundried tomatoes $2, other $1, per meal, $3

Cooking Instructions

Half an hour
  1. 1

    (Before starting, boil noodles, drain, keep warm).
    Heat skillet, fry sundried tomatoes and peeled garlic cloves in at least 2Tbs olive oil, 2 minutes to release the flavors, lift out of oil, set aside.

    Add shrimp to olive oil in skillet, heat two minutes each side. Set aside.

    Add chopped onion to olive oil, glaze, add white wine, cook till reduced by half.

    Turn down heat, add cream, stir till bubbly. Add cheese, stir till cheese has melted. Add spinach, simmer till it tastes perfect to you.

    Add shrimp, garlic and sundried tomatoes back into pan, bring to temperature, serve over noodles, or with fresh sourdough bread. Enjoy.
