Ingredients

  • 4eggs
  • 8bread slices
  • 1/2 cupcheese
  • 3 tbspolive oil
  • 1/2 tspwhite salt
  • 1/2 tsppink salt
  • 1/2 tspblack pepper powder
  • 1/2:tsp red chilli flakes
  • 1/2 tsppaprika
  • 1/2 tsporegano
  • 1bell pepper of any colour
  • 2stems of spring onion whites
  • 1medium size onion
  • Handfulcoriander leaves
  • 7-8garlic cloves
  • 1/2 inchginger
  • 2green chillies

Steps

  1. 1

    To start this yummy recipe wash all the veggies and pat dry them. Then chop it very finely either manually or in a chopper. I am using this much veggies you can use as many as you want as per your likes and taste only remember one thing that you have to finely chop them. You can add tofu, mushroom, grated carrots or anything you prefer. You can adjust the quantity also as per your likes. Now after chopping keep them aside and in a big bowl crack all the four eggs.

    Beat the eggs until uniformly combined then add all the chopped veggies one by one and give it a good mix then add all the seasonings and mix very well until all combined well. Then add the cheese 1 tbsp olive oil and mix sgain. I am using cheddar cheese you can use any like mozzarella, processed or feta cheese. In place of cheese you can add shredded paneer also. Use can use any oil also. Now keep the bowl aside. Preheat the oven at 180°C for 10-15 minutes.

    In a baking dish add 2 tbsp oil and spread evenly it. Then set the breads in them 3-4 slices or as many fits in the baking dish. You can use any bread either white, brown, bran, multigrain or any of your choice just make sure the slices are thick. Now gently press the slices all over to kinda make room in it to pour the egg and veggies mixture. Pour the mixture all over evenly as much as you like. I have made 8 egg toast in this mixture. Then bake it.

    Bake it at 180°C for 25 minutes or until done according to your oven. Once done take them out from the oven and serve with the choice of your dip or as it is.
    Make it and enjoy it with your loved ones.
