An amazing Dessert from the Western India mainly the states of Maharashtra and Gujarat. It actually is much similar to the North Indian Dessert called Rabri. The main difference between the two is that while Rabri is more thicker, Basundi on the other hand is a bit thinner and smooth.

Both are creamy Milk based one's and tastes equally divine. Rabri is actually thick and Pudding like whereas Basundi is thinner and smoother.
It is mostly made on special occasions and mainly Festivals too. It's creamy , melt in mouth texture leaves you craving for more. Kids as well as the adults would love it. Making it is also quite simple. Not much complicated at all. It's all about reducing the Milk which has to be done with a lot of patience.

Boil milk on a low flame until reduced to half of the original quantity. Cook on a low heat until it cooks perfectly well and eventually thickens. Add chopped or slivered mixed Nuts of your choice to it. Continue simmering. When it is almost thickened, add Sugar.

Mix well and allow to simmer on a medium high heat by continuously stirring it at regular intervals until it reaches your desired consistency. Also can add Saffron strands. Take care about the stirring and keep an eye on it while it's simmering. Otherwise it might get burnt at the bottom.

It thickens gradually. And usually thickens more as it cools down. Mix well and garnish with more of slivered Almonds and Pistachios. Serve it warm or chilled. The choice is yours. Enjoy! Yum!
