Kochuri filling - in a blender add the Motorsuti, chopped ginger and green chillies. Adding 2-3 Tbsp water make a fine paste, set aside

In a wok heat mustard oil and add hing, add the Motorsuti paste and stir on medium flame

Add roasted cumin powder, salt and keep stirring until the paste leaves surface

Set aside to cool

For Dough - in a bowl add Maida, salt and oil and mix. Add lukewarm water to make a soft dough, keep it covered for 30 mins

Roll out balls and add the filling and fold from all sides

Roll out with rolling pin on a greased surface

In a wok heat adequate oil and add the kochuri, on medium flame fry for 2 mins, press to make it fluffy and flip sides. Fry for 2 mins and set aside

Serve hot with Notun Aloo Dum and enjoy a wintry Bengali delicacy
