Bitter gourd curry, more commonly known as Karela sabzi in India, is a semi-dry side dish where sliced or chopped bitter gourd is cooked with onions and ground spices.

Bitter gourd curry, more commonly known as Karela sabzi in India, is a semi-dry side dish where sliced or chopped bitter gourd is cooked with onions and ground spices.
Steps

Wash 250 grams bitter gourd thoroughly under running water.

Then slice them thin or chop them to bite-sized pieces.

I usually soak them up in a large pot filled with salt, turmeric, chilli powder and Leave for about 30 mins.

Heat 2 tablespoon oil in a pan. Once the oil turns hot, add half teaspoon cumin seeds. You will see they begin to crackle soon then add Hing, sauf and ajwain.

Add bitter gourd slices and sprinkle ¼ teaspoon salt. Saute well for 2 to 3 mins.

Add 1 teaspoon turmeric powder, 1 tablespoon coriander powder and 1 teaspoon red chili powder.

Mix everything well and saute for a min. Cook covered on a low flame until bitter gourd is completely soft cooked.

Turn off the flame and add 1/2 tbs sugar and 1/2 tbs amchur powder and cover with the lid.
Your Bitter Gourd Vegetable is ready to serve.!!
