I was thinking about a salad we can enjoy during Christmas, and I came up with this recipe. I prepare this salad every year.

You can either use homemade potato salad or the store-bought kind. You can also just mash the potatoes, and mix with mayonnaise, salt and pepper without other ingredients. For 2 servings. Recipe by ayukoro

2servings Potato salad or mashed potatoes
1/2Broccoli
1Frozen mixed vegetables
1Bell peppers and cherry tomatoes

Form a tree shape with the potato salad on a plate.

Decorate with defrosted mixed vegetables and finely chopped bell peppers. Place a star-shaped bell pepper on top of the tree.

Stick on broccoli microwaved for about 2 minutes, and bite-sized cherry tomatoes around the potato salad tree, then it's done.
