Cooking Instructions

The trick is to start with the best carrots you can find.
Peel carrots and parsnips, rinse and pat dry. - 2
Using a mandoline slicer, Julienne carrots, celery and parsnips.
Add to a large bowl. - 3
Chop fresh dill and mint, add to a bowl.

Add dried cranberries and black pepper.
- 5
Drizzle with lemon juice, toss the salad, and enjoy!

(Before I forget Charlie had a great time too!!!) 🙂Since food was way to much this weekend, today’s lunch is light and salad is the only option. I ate Carrot Salad for the first time at my mother-in-laws :)…I remember that she placed it on the table and I made some sort of facial expression because she caught it hahahahahahah…and she remarked..:) Don’t get me wrong I love my mother-in-law, I have been very lucky she is like a second mom to me, anyway because I love salad I was absolutely going to try it, and have been making it myself since then. 🙂 Foodzesty -
