Ingredients

4 servings
  • 1large navel orange
  • 3 Twhite wine vinegar
  • 1 Tolive oil
  • 1 Thoney
  • 1/4 tspsalt
  • 1/8 tspblack pepper
  • 2 cchopped chicken
  • 1 (6.5 oz)package sweet butter lettuce salad greens
  • 1/4 cfresh mint leaves, torn

Steps

  1. 1

    Peel and section orange over large bowl, squeezing membranes to extract juice and placing section in separate bowl.

  2. 2

    Whisk into juice the vinegar, oil, honey, salt and pepper.

  3. 3

    Add orange sections, chicken, lettuce and mint. Toss gently and serve immediately.
