Crustless Smoked Trout and Leek Quiche

Steps

Preheat the oven to 350°F (180°C).
Wash and thinly slice the leek.
Peel and finely chop the shallot.
Microwave the sliced leek in a covered dish with a little water for 7 minutes. Drain well. - 2
Spray a skillet with oil and sauté the shallot.
Add the sliced leek.
Cook for a few minutes to remove excess moisture.
Season with salt, pepper, and curry powder.
Set aside. - 3
In a mixing bowl, whisk the eggs with the yogurt and sour cream.
Add the oat bran and almond flour.
Mix well.
Fold in the leek mixture and pieces of smoked trout.
Mix again.
Add the grated Parmesan cheese.
Stir to combine. - 4
Pour the mixture into a small baking dish to achieve a nice thickness.
Bake for about 30 minutes, keeping an eye on it.
This quiche reheats well in the microwave.
