  • 6eggs
  • 1 2/3 cupsunsweetened evaporated milk (400 ml)
  • 2/3 cupflour (75 grams)
  • 1/2 cupsugar (100 grams)
  • Zest of 1 lemon
  • 1 teaspoonground cinnamon

    Separate the egg whites from the yolks.

    Heat the evaporated milk with the sugar, cinnamon, and lemon zest.

    Pour the hot milk over the flour and mix well.

    Add the egg yolks.

    Beat the egg whites until stiff peaks form, then gently fold them into the mixture.

    Pour everything into a buttered and floured baking dish.

    Bake for 25 minutes at 350°F (180°C).

    Let cool before removing from the dish.
