Steps

Place the water, coconut and salt into a saucepan. Mix well to break up any chunks of the coconut milk.

Bring to the boil, stir in the rice and lower the heat.

Cover and simmer for 15-20 minutes or until most of the liquid is absorbed.
- 4
Remove from the heat and allow to sit covered for another five minutes.
- 5
Stir in the spring onions and serve.
