Clean fish - washed & gutted. Pat dry with clean kitchen towel. Score both sides of each fish 2 to 3 times. Add turmeric powder and chicken seasoning powder or chicken bouillon into the fish bowl. See pic below. Coat each fish (all sides & cavity) evenly with these seasonings.

Next, heat enough oil for deep frying. Meanwhile, dredge each fish on corn flour, making sure every part of the fish is THINLY coated. Make sure to shake off excess flour. Do this before you putting the fish into hot oil.

Make sure the oil is hot. Dip a bamboo stick or wooden chopstick (if you have any) into hot oil. If bubbles formed around the stick, that indicates that the oil is ready. Fry fish in batches, avoid overcrowding the wok or frying pan. Do not touch or move the fish for 2 - 3 mins. Fry both sides of each fish until golden. Remove from the heat and drain excess oil by placing them on a cooling rack or paper towel. Best served warm with stir fry veggies, some soup and rice.
