Spinach, Bacon, Mushroom and Feta Crustless Quiche

Heat oil in a large pan. Sauté the onion until soft, add garlic and stir until fragrant.

Add bacon bits, spinach and mushrooms and sauté until all liquid has evaporated. Season with the salt and pepper. Add feta.

Place mixture in a greased pie dish.

Beat together the self-raising flour, milk and eggs. Pour over mixture in pie dish.

Bake at 180°C for about 30 to 45 minutes until lightly browned and set.
