Veg Cutlet
Vegetable Cutlet is a wonderful party serve.
Steps

Assemble ingredients

Take boiled potato

In moderately heated pan add oil, add ginger + green chilli and sauté for few seconds, then add carrot + beetroot + green chilli and sauté for 3-4 minutes by covering.

Add salt + garam masala and sauté further for few minutes more by sprinkling little water till veggies turn soft.

Veggies is cooked and allow to cool. Discard green chilli and keep aside.

Mash potato, add cooked veggies + corn flour + salt (as required) to mashed potato and mix very well.
mixture for cutlets is ready. Give shape of round balls and give a gentle press,give shape of cutlets.
Prepare a medium thick slurry of Maida + salt + red chilli powder + water. - 7
Dip each Cutlets into slurry and coat with bread crumbs all over and refrigerate for 10 - 15 minutes.

Drop cutlets in medium heated oil and shallow fry under low to medium flame.

Shallow fry till golden brown and crisp from all sides.

Cutlets is done. Sprinkle rock salt and serve hot and crispy.
