When you have leftover rotisserie chicken, make these amazing croquettes 🤤 This recipe makes about 40 croquettes this size 🍽️

Chop the leftover chicken and save any juices.

Sauté the onion in a large skillet, then set aside with the chopped chicken.

Add a little butter or oil to the pan for the béchamel. When hot, add the flour and cook it so it doesn't taste raw. I like to add a bit of the chicken drippings here.

Add the milk and stir well to remove any lumps until it thickens. Add nutmeg and salt.

Add the chicken and onion, and cook over low heat, stirring constantly, until you reach the desired consistency.

Spread the béchamel mixture in a large dish so it cools evenly and is easier to shape later. Drizzle a little oil on top, cover with plastic wrap, and refrigerate for a few hours.

Cut the chilled mixture into squares the size you want your croquettes. Rub a little oil on your hands and shape them into balls. Coat each one in breadcrumbs, then egg, then breadcrumbs again, and fry in plenty of hot oil until golden.
