Petha is a translucent soft candy from Indian subcontinent made from Ash Gourd or White Pumpkin. It is generally made by cutting Ash Gourd into cubes, soaking in Lime and then boiling and coating in a flavoured Sugar syrup.
Nowadays with growing innovation and new trends, many varieties of Petha is available in the Indian sweetmeat shops.
A very famous story that goes around it's history is that once the famous Mughal Emperor Shah Jahan ordered his royal cooks to make a special Dessert that would be as pure and White as the Marble clad Taj Mahal.
Thus was invented the popular Petha which later became so famous and well known as Agra Petha.
In this particular version, I have used dry food colour of Kesar thereby lending it a beautiful hue. Beautiful looking and delicious both at the same time.

Steps

Peel and cut the ripe ash gourd into cubes. Poke them with a fork all over. Immerse them in a bowl full of water with limestone or the common chuna that we get easily in the markets. Leave it for a good 2 hours or overnight for best results. Later rinse thoroughly so that no traces of limestone remains.

Now boil them on a high heat for about 15 minutes. Drain well and now it is time to cook these cubes. Boil sugar and water. Also add the colour to it. As soon as it starts boiling vigorously, add these cubes to it. Cook until the syrup becomes transparent and thicker. Add a pinch of cardamom powder to the syrup for flavour.

It takes around 10 minutes or so. Take it off the heat. Leave it aside so that they soak up the syrup nicely for an hour. After about one hour or so, spread these in a plate and leave under the fan to dry up. By next morning, these are all set. Store them in airtight containers and relish for a month and even more. Enjoy! Yum!
