Garden Fresh Tomato Soup

Cooking Instructions

Sauté onions with olive oil over medium heat until translucent.

Add tomatoes (I cut chunks of large tomatoes to remove stalk and left the cherry and Roma tomatoes whole) and simmer on medium for 15-20 minutes.

Add seasoning and fresh basil and simmer for 10 mins on low to medium heat.

Immersion blend tomatoes for about 2-3 minutes on the highest setting. Be careful not to get close to the bottom of the pot!! This is super important especially if you have coated cookware. This can be very toxic if pieces get into your food!!

Strain if desired. This can be very time consuming, and the skins provide lots of fiber to the soup, so I only strained three jars for my daughter.

Serve hot with some cream or freeze. I pressured canned mine!
