Low Carb Whiting Fingers

My hubs is a “fresh water” fish eater. So I had to come up with a disguise for this dish.

Ingredients

20-25 minutes
2 servings
  1. 2whiting filets
  2. 1egg
  3. 4 cupspork rinds
  4. 1/4 tspblack pepper
  5. 1/2 tspgarlic powder
  6. 1/2 tspsalt

Cooking Instructions

20-25 minutes
  1. 1

    Preheat oven to 400*.

  2. 2

    Place pork rinds in food processor and grind. Add garlic powder, pepper and salt to ground rinds.

    Cut fillets into fingers. Beat egg. Dip fingers in egg. Roll in the seasoned rind dust.

  4. 4

    Place on parchment lined baking sheet.

  5. 5

    Bake 20-25 minutes until golden brown. Allow to cool about 5 minutes then serve.

    Cook in air fryer at 400*. 8-10 minutes, turning halfway through.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
