Hi there!☺️👋 How are you? Today, around 10:40 a.m., I started by boiling eggs and making maca with oats. HOURS LATER, my mom and my little brother, who is only 6, came downstairs from the second floor. There was some bread in the breadbox, and since I had already made the eggs and maca, Mom gave him: warm mashed plantain, bread with hard-boiled egg, and maca with oats to drink.
My little brother finished eating and we were going to make chicken soup... but we decided to eat something first🤭. So Mom turned on the TV📺 and went to YouTube, and right there on the main screen, as if by chance, a video popped up for quick and easy bread recipes. Mom clicked OK on the remote, and there were 3 recipes for making bread. We would have loved to make bread for the first time, but we didn’t have flour—just cornstarch. Then she remembered we had leftover unsalted lettuce and some crackers from the 'Broaster' recipe.
💡That’s how the idea came up: why not make Lettuce Fritters with crackers?
Since it was already lunchtime🕛, that would be our lunch, and the soup would be for dinner. At home, we usually make just one recipe for lunch and dinner.
But sometimes, parents get a spark of creativity just when they need it most, using what’s on hand before it goes bad, and saving a little extra money for other things. Isn’t that great? Well, let’s get started! 🤭⏭️

Ingredients

About 1 hour
Serves 6 servings
  • Water, maca powder, old-fashioned oats, milk of your choice, and sugar
  • 6eggs (3 eggs for the fritters and 3 for boiling)
  • Lettuce 🥬 or other vegetables or fruits of your choice (💌 If you want savory fritters, choose vegetables; if you prefer sweet, choose fruits👌)
  • 1 portioncrackers, either salty or sweet (we used salty crackers because that’s what we had left over 🤭 from the broaster)
  • About 1/2 cup cornstarch or potato starch
  • 1 teaspoonbaking soda and about 2 teaspoons baking powder (if you don’t have these, just add a bit more cornstarch or potato starch)
  • Oil of your choice and salt🧂 to taste
  • Optional for serving: Seedless avocado (sometimes called 'dedo'), and 1/2 lemon 🍋. Or onion salad with chili or tomato... If making sweet fritters, serve with nuts, carob syrup, or honey

    Boil three eggs in a small pot for about 20 minutes over low to medium heat.

    In a bowl, combine 1 1/4 cups maca powder and about 1/2 cup oats with water. Stir until dissolved, then pour into a medium pot. Stir constantly and keep an eye on it. When it starts to bubble, let it cook for a few more minutes, then turn off the heat. If you want it thicker, cook it a bit longer. ⚠️💌 Watch carefully so it doesn’t boil over—keep stirring.

    Chop the lettuce on a cutting board. In a bowl, beat the other 3 eggs, then add the lettuce, finely crushed crackers, cornstarch or potato starch, baking soda, baking powder, and salt🧂 to taste. Mix well and let rest for about 5 minutes.

    Heat oil in a skillet. Using a large spoon, scoop the batter into the pan over low heat—cook two at a time. Increase the heat, and when they turn golden brown, lower the heat and flip with a spatula. When done, set aside on a plate and continue cooking the rest, two at a time.

    🎉All done! Time to serve. I added milk and sugar to my glass to taste, and served the rest with avocado slices, 1/2 lemon, and hard-boiled egg. As I mentioned, this was my lunch. If you want it for breakfast or something lighter, serve just one fritter and skip the hard-boiled egg and milk. I chose light milk🤭 and added sugar to the plate—not sure why, but it’s done.
