Crispy and Delicious Baingan (Brinjal) Tawa Fry Recipe. A quick and easy fried eggplant recipe which is crispy from outside and soft inside. Serve it as a side dish with hot steamed rice and dal which is the best combo.

Firstly, dry roast the gram flour.

Now to prepare the dry mixture for coating the brinjal: In a mixing bowl add all the ingredients mentioned under the heading “Mixture for Coating the Baingan “. Mix until well combined.

Wash the brinjal well. Wipe it dry. Discard the unwanted parts. Cut into 1 cm thick roundels. Coat the slices well with the prepared dry mixture on both the sides and set it aside. After few minutes you will notice the mixture sticking to the slices. This is because of the salt in the mixture which helped the brinjal to release moisture. Coat all the slices with the mixture and set it aside for 8-10 minutes.

Heat mustard oil on a tawa on medium flame. Add the brinjal slices. Then reduce the flame to low and cook for 4-5 minutes. Flip and cook again for 4-5 minutes or till done.

Transfer it onto a serving plate.

Crispy and Delicious Baingan (Brinjal) Tawa Fry is ready. Serve it immediately with hot steamed rice and dal.
