“Gringo taco” is sort of a joke name because of lot of non Mexicans first started loving tacos thanks to Taco Bell, which for the record did not invent the hard shell taco filled with spiced ground meat, which is basically what a Gringo Taco is. It’s beefy and mildly spicy and really good. It’s origins are a little fuzzy but it most likely was first cooked up in Texas, where beef was plentiful and Mexican immigrants made the most of what they had at hand.

Ingredients

Makes 12 tacos
  • Gringo seasoning :
  • 2 tsponion powder
  • 1 tspchilli powder
  • 11/2 tspdried red pepper flakes - I didn’t use this
  • 1 1/2 tspground cumin
  • 1 1/2 tspgarlic powder
  • 1 tspdried oregano
  • Pico de gallo:
  • 2ripe medium tomatoes, cored and diced
  • 1/2small red onion, diced
  • 1/2small white onion, diced
  • 2jalapeños, halved, seeds and ribs removed, diced
  • 1/4 cupchopped fresh cilantro
  • Juice of 1 lime
  • 1 tbsppure olive oil
  • 1 tspsalt
  • 2 tbspcanola oil
  • 1medium white onion, diced
  • 700 g80% lean ground beef
  • 1/2 tspground black pepper
  • to taste Salt
  • 12hard shell tacos
  • 1/4 cupshredded Mexican - style cheese blend, or store bought
  • 1/4 cupshredded iceberg lettuce
  • 1 1/2 cupsPico de gallo
  • Hot sauce, such as Trejo’s, Cholula or Tapatio

    Make the gringo seasoning:

    In a medium bowl, mix the onion powder, chilli powder, cumin, paprika, garlic powder, and oregano, mix it together and set aside.

    To make Pico de gallo:

    Add the tomatoes, onions, jalapeños, cilantro, lime juice, olive oil and salt to a medium bowl and mix well.

    Now taste it. Does it need more salt or acid? If so, add a pinch or two of salt or a squeeze of lime juice. When it tastes the way you want it to, you are done.

    Cook the beef:

    Heat the oil in a large skillet over medium high heat. Add the onion and cook until it soft and translucent.

    Add the beef and the Gringo seasoning and cook, stirring occasionally, until the beef is browned, about 15 minutes.

    Add 1/2 cup of water. Cook until most of the water has evaporated, about 5 minutes. Add the salt and pepper and stir to combine. Remove from the heat and set aside to cool.

    Make the tacos:

    Divide the beef among the taco shells, top each taco with the cheese and then add the lettuce, at last top with Pico de gallo.
    Serve with hot sauce to taste, Jalapeños and the Pico de gallo
