Hold a piece of asparagus in the middle and snap the base off. It should snap where the tender part is.

Lay each piece flat on a chopping board and about 3cm from the tip peel off the outer layer.

Put into sous vide bag with milk, salt and sugar and cook at 85c for 25 mins
- 4
Carefully open bag and drain away the liquid (I save into a pan and simmer with an onion and the bottom ends and make into a soup)

Put into serving plate add the butter and some course sea salt - WOW
