15-Minute Marinade for Frozen Egg Yolks

Whenever my eggs are about to hit their expiration date, I always store them in the freezer to create this easy and eco-friendly appetizer.
It's a stylish dish to serve to guests as well.

While freezing the eggs, the egg shells will crack, so be sure to freeze and defrost them in a resealable plastic bag. The defrosted egg whites will return to their original form, so use them as you normally do. If you don't have dashi soy sauce, use soy sauce and mirin instead. If you don't have shaoxing wine, substitute with sake. For 2 servings. Recipe by Ogunyanko

Ingredients

2 servings
  • 2Eggs
  • 1 tbsp■ Dashi soy sauce
  • 1 tbsp■ Shaoxing wine (or sake)

Steps

    Put the uncooked eggs in a plastic bag, chill them in the freezer, and let sit overnight.

    Remove the eggs from the freezer, defrost them in the plastic bag (for about 3 hours at room temperature), and separate the egg whites and yolks.

    Place the egg yolks in the combined ■ ingredients, tightly cover them with plastic wrap, and marinate for about 15 minutes, flipping them over once.

    Place the egg yolks in a bowl, drizzle on some of the marinated sauce, and serve. Eat it in tiny bites!

    They are also delicious marinated with sashimi, such as squid or pink shrimp!
