Ingredients

  1. 1 1/4 cupsall-purpose flour
  2. 2 tspbaking powder
  3. 1 Tbspumpkin pie spice
  4. 1/4 tspsalt
  5. 3/4 cgranulated sugar
  6. 1/4 clight brown sugar, packed
  7. 3/4 cpumpkin puree
  8. 1/3 cVegetable oil
  9. 1/4 cUnsweetened vanilla almond milk
  10. 2 Tbsmolasses
  11. 2 tspvanilla
  12. Topping
  13. 3 Tbsgranulated sugar, divided 3 ways
  14. 1 1/2 tspcin divided 3 ways

Cooking Instructions

    Preheat oven 400F. Spray 5x3x2 inch mini loaf pans

    In large bowl add flour, baking powder, pumpkin pie spice, salt. Whisk and set aside.

    In separate large bowl add sugars, pumpkin, oil, milk, molasses, vanilla. Whisk until combined

  4. 4

    Pour wet mix over dry ingredients and stir until just combined. Don't over mix.

    Evenly distribute in pans (about 2/3 full)

    Sprinkle with 1 Tbs sugar over each

  7. 7

    Sprinkle 1/2 tsp cin over each

  8. 8

    Bake for about 40-43 mins. Start checking at 30 mins.
