Thyme or Za'atar is a great Middle Eastern Herb popular for it's aroma and flavour. It is used extensively in Mediterranean cuisine as well as in popular Arabic dishes.   • 2 sprigsfresh Thyme
    Homemade Middle Eastern Spice Blend Za'atar
  • 1 tbspPalm Jaggery
  • 2-3 cupswater

Steps

    Bring water to a rolling boil on a high heat at first. After it starts boiling vigorously, lower the heat. Allow it to simmer for 3-4 minutes more.

    Now add the thyme sprigs. Boil for 2-3 minutes and then switch off the gas. Allow it to steep for about 2 minutes more. Also add the palm jaggery according to taste.
