Ingredients

  1. 1/2onion
  2. 4 clovesgarlic
  3. 1/2red bell pepper
  4. 1 cancrushed tomatoes
  5. Corn tortilla (for garnish)
  6. Black pepper
  7. 1/2bouillon cube
  8. Chicken broth (same amount as the can of tomatoes)
  9. Oregano
  10. Mozzarella cheese

Cooking Instructions

    Chop the onion, garlic, and bell pepper and sauté.

    Add the can of tomatoes and the broth along with the 1/2 bouillon cube and let simmer over medium heat.

    Blend everything and add a pinch of oregano. Set aside.

    Make the corn tortilla and cut it into strips.

    Serve the soup, place the cheese on top, and add the tortilla strips. Optionally, add chopped avocado.
