To make the masala powder stock;
All ingredients should be dry roasted.
In a heavy pan over medium heat, first fry the coconut until golden brown and ptransfer to a plateto cool. Dry roast the rest o remaining ingredients in a heavy pan over medium heat and fry until fragrant. Grind the fried ingredients in a mixer. Spice powder can be stored in an airtight jar for up to 1 month - 4
Add 3 cups of boiling water to the red karamani in a bowl, soak for 4 hours. Cook in a pressure cooker until soft but not mushy, I don't have a whistle cooker. Use a Pressure cooker. Put enough water in the cooker for steam generation. Place the karamani bowl inside the cooker and cover the cooker, place the weight, Start with a high flame. When the weight starts rotating, simmer the flame. Turn off the stove, when the beans are 70% cooked. May take about 10 minutes.

When the beans are cooking attend to the rest of the chores for making the koottu. In a heavy pan over medium heat the oil, about 2 minutes. Add mustard seeds, let them burst open. Add fennel seeds, cumin seeds and fenugreek seeds to the pan. Add urad, When the dal turns golden, add onions green chilies, and sauté. When the onion turns brown, add ginger, garlic, turmeric powder, curry leaves and tomatoes and cook for 4 minutes, until the tomatoes get soft.

Add figs, stirring, 4 minutes. Then add 2 cups of water, bring it to boil, add cooked beans and stir. Add masala powder and stir. Simmer the fire. Turn off the stove after 5 minutes. Add coconut milk. Add salt and stir. Remove from oven. Transfer the koottu to a serving bowl.. Aromatic flavorful healthy koottu is ready for your eatinfg pleasure

Mix it with cooked rice. Add ghee to make it tastier. You may also serve the koottu with chapathi, parantha and etc.
