Knafeh Khishneh (Coarse Knafeh)

Preheat the oven and lightly toast the knafeh dough.

In a food processor, combine the knafeh dough, a little knafeh coloring, and 3 tablespoons of ghee until the dough comes together.

Grease a baking pan well with ghee, then spread a layer of the knafeh dough in the pan.

Add the cheese on top of the knafeh layer.

Sprinkle a very thin layer of knafeh dough over the cheese to prevent the cheese from sticking when you flip it.

Bake in the oven for 10 minutes.

Remove from the oven, flip onto a larger pan, and return to the oven for just 2 more minutes.

Take it out of the oven, pour the simple syrup over it, and garnish with pistachios.

Note: Do not leave it in the oven for too long, or the cheese will dry out.

If you want the coarse knafeh to be finer, grind it twice. Here, I made it finer than the one above.
