Steps

Mix together the ingredients marked with ☆ (oyster sauce, Japanese-style sauce, soy sauce, and sugar).

Roughly chop the cabbage, cut the carrot into thin strips, and slice the sausages diagonally.

Beat the egg well with 1 tablespoon of water.

Heat a generous amount of oil in a frying pan, add the egg mixture, and scramble. Transfer the scrambled egg to a separate plate.

Place the cooked udon noodles in a colander and loosen them under running water.

Add a little oil to the same frying pan. Add the sausages, then the carrot, then the cabbage, and stir-fry over high heat.

Add the udon noodles and the mixed ☆ sauce. Stir-fry until most of the liquid has evaporated. Once cooked, add as much mayonnaise as you like and mix well.
