Ingredients

  1. 1 packetVeggies veggies Beans Carrots Potatoes - frozen : , ,
  2. 1Onion large - diced
  3. 2Tomato - medium chopped
  4. 4Green Chillies (depending on taste) -
  5. 1 tbspGarlic Ginger and paste -
  6. Mustard Seeds
  7. Fennel Seeds
  8. 1Bay Leaf -
  9. 1Cinnamon Stick - broken
  10. 6Cardamom -
  11. a fewCashews -
  12. 1 tbspGaram Masala -
  13. 1 tspChilli Powder -
  14. 1.5 tspsCoriander Powder-
  15. to TasteSalt
  16. 1 tbspGhee (Clarified butter) -
  17. Oil
  18. 2 cupsrice water of - washed and soaked in

Steps

  1. 1

    In a deep pot, heat some oil and add the mustard seeds

  2. 2

    When it starts popping add the fennel seeds, 1 bay leaf, cinnamon stick and the cashews

  3. 3

    Saute for a couple of minutes and add the green chillies and onions

  4. 4

    A few minutes later add the tomatoes

  5. 5

    Next the masala powders go in

  6. 6

    Add some water and let it cook

  7. 7

    When it comes to a boil, add the frozen veggies and some salt to taste

  8. 8

    Coat the base of a pressure cooker with some ghee

  9. 9

    Transfer the contents of the pot to the cooker, add the two cups of rice, 4 cups of water, some salt

  10. 10

    Give this a good stir, close the lid and let it cook for 2 whistles

  11. 11

    Let it rest until the pressure goes off

  12. 12

    Serve hot!

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US.
