Mix the chives and udon noodles cut into 1-inch pieces, ground pork, and eggs in a bowl.

Add salt, pepper, sesame oil, and soy sauce, and knead well. (Kneading well helps them cook nicely.)

Cook both sides until crispy in a frying pan with sesame oil. (Don't shake the pan too much.)
Cook each side for about 2 1/2 minutes. Total cooking time is about 5 minutes. - 4
You can use just 1 egg, but using 2 makes the mixture a bit softer, which helps it hold together better when cooking.

Recently, I've been enjoying it with yuzu ponzu and shichimi spice.
Great as a snack with beer or as a side dish!
