Garlic Roasted Potatoes & Squash

During my college days, my friends and I always made roasted potatoes when we planned for dinners together or if we had other friends over. After a little bit of chopping, you put the ingredients in the oven and that was it - you can go around and do other things while the oven did all the work. I baked some chicken, and as in all cultures potatoes go well with chicken. I had some squash that needed to be used, so I chopped those up with the potatoes and it turned out as a great side dish. Kingsley was busy picking the squash off my plate too :)

Preheat your oven to 180C

In a non-stick baking sheet, add all the ingredients, drizzle some olive salt and toss well to coat the potatoes and squash evenly with the oil, and seasoning

Bake in the oven until it is done

The potato skins will get crispy and the flesh will be nice and soft

Garnish with some freshly chopped cilantro (coriander)

Serve hot as a side dish with your meal! How simple was that!!!!
