Ingredients

  • ------eggplant--------
  • 1large eggplant, Aubergine
  • 1/2 teaspoonsalt
  • 2 tablespoonsextra virgin olive oil
  • ---sauce-----
  • 1/2 poundsausage
  • 1 teaspoonsweet basil chopped
  • 1 teaspoonoregano chopped
  • 1 teaspoonsalt
  • 15 ouncestomato sauce
  • 2 tablespoonsdemerara sugar
  • ----topping------
  • 2-1/2 cupschunk mozzarella cheese

Steps

  1. 1

    Preheat oven 400 degrees fahrenheit

  2. 2

    Brown the sausage in the olive oil in an oven safe dish

  3. 3

    Remove the sausage to a bowl

    Peel and thinly slice the eggplant

  5. 5

    Layer the eggplant in a circle pattern in the dripping of oil and sausage drippings. salt all the eggplant slices

    Mix the sauce ingredients with the cooked sausage

    Pour on top of eggplant layers

    Add cheese to top of sauce put in oven for 35-45 minutes.

    Let sit 5 minutes
